VINIFICATION TECHNIQUE: Part of the grapes follow the classic vinification. The collection is manual and the destemming-pressing takes place immediately. Fermentation follows in the winemaker for 8-10 days. The malo-lactic fermentation is done in steel and the refinement of at least 8 months in barriques and tonneaux of 3rd - 4th passage. A part of the grapes is harvested in 5 kg crates and left to dry for 30 days. Vinification follows and then aging in barriques of 1st - 2nd passage for at least 10 months. A cut is then made between the two types of Cabernet Sauvignon to produce Rosso Giunone, where the passito part varies from 20 to 50%, depending on the vintage. After bottling it remains in refinement for at least 6 months before being released for consumption.
ORGANOLEPTIC: ruby red color with garnet reflections. The nose has a good intensity and persistence, with hints of berries, herbaceous together with spicy ones such as clove and black pepper. In the mouth it is balanced, with a soft tannin and a good persistence.
GASTRONOMIC COMBINATIONS: recommended with roasts, game and grilled meat.
TASTING TEMPERATURE: 16-18 ° C
