TYPE OF GRAPES: 100% Garganega

PRODUCTION PER HECTARE: about 11 tons

GRAPE HARVEST: The harvest is done by the first half of September to obtain sustained natural acidity. The bunches are harvested by hand to avoid breaking them which would cause oxidation of the must and therefore a lower quality of the wine.

VINIFICATION TECHNIQUE: The grapes are crushed and de-stemmed and immediately softly pressed in order not to extract unpleasant substances (polyphenols).

Fermentation takes place at 16 ° C at controlled temperature and lasts about 15 days.

The wine then refines for 2-3 months, and then it is transferred to the autoclave where the refermentation takes place by the yeasts, according to the Charmat method.

ORGANOLEPTIC: bright straw yellow color, with light greenish reflections, the nose is fine, elegant with a gentle hint of yeast and white flowers, while on the palate it is balanced and fresh.

GASTRONOMIC COMBINATIONS: excellent sparkling wine as an aperitif and throughout the meal with fish.

TASTING TEMPERATURE: 6-7 ° C
